How it works

A cup is a measure of volume, but a recipe's result depends on mass. Different ingredients have different densities, so a cup of flour weighs 120 g while a cup of honey weighs 340 g. Converting cups to grams therefore needs a separate factor for each ingredient.

The calculator first converts the amount to cups (a tablespoon is one sixteenth of a cup and a teaspoon one forty-eighth), then multiplies by the ingredient's typical weight per cup. Ounces are weight ounces, not fluid ounces, at 28.3495 g each.

Use these figures when converting a US recipe for a kitchen scale, or when checking that a volume measurement is in the right region. For a recipe that was written by weight, use the recipe's own weights rather than converting back.

cups   = amount × (1, 1/16 or 1/48 for cups, tablespoons, teaspoons)
grams  = cups × grams per cup of the ingredient
ounces = grams ÷ 28.3495

Example

1 cup of all-purpose flour, the default, is 1 × 120 = 120 g, or 120 ÷ 28.3495 = 4.2 oz.

3 tablespoons of butter is 3 ÷ 16 = 0.1875 cup; at 227 g per cup that is 42.6 g, or 1.5 oz. Two cups of all-purpose flour is 240 g (8.5 oz).

Assumptions and limitations

  • Grams per cup are typical published values for each ingredient, for example those on King Arthur Baking's ingredient weight chart. Brands and measuring technique vary: a cup of flour scooped and packed can weigh 10% more than one spooned and levelled. Treat results as accurate to about ±10%.
  • Brown sugar is assumed to be firmly packed into the cup, as most US recipes specify.
  • Cups, tablespoons and teaspoons are US customary measures (1 cup = 236.6 mL). A metric cup is 250 mL and a UK tablespoon 15 mL, so recipes from elsewhere convert slightly differently.
  • Ounces are avoirdupois weight ounces, not US fluid ounces. The two coincide only for water-like liquids.
  • The ingredient list covers the most common baking staples only.

Frequently asked questions

Why does a cup of flour not weigh the same as a cup of sugar?

Because they have different densities. Sugar crystals pack more mass into the same space than flour particles do, so a cup of granulated sugar weighs about 200 g against roughly 120 g for all-purpose flour. That is also why recipes written in grams are more repeatable than recipes written in cups.

Is an ounce here the same as a fluid ounce?

No. This calculator reports weight ounces (28.35 g). A US fluid ounce is a volume, one eighth of a cup. A cup of water is 8 fluid ounces and happens to weigh about 8.3 weight ounces, but a cup of honey is still 8 fluid ounces while weighing 12 weight ounces.
